What does Jesus mean by "unshrunk cloth on an old garment" and "new wine put into old wineskins"?


Matthew 9:16 - 17

16 No one puts a piece of unshrunk cloth on an old garment, for the patch tears away from the garment, and a worse tear is made. 17 Neither is new wine put into old wineskins. If it is, the skins burst and the wine is spilled and the skins are destroyed. But new wine is put into fresh wineskins, and so both are preserved.

What did Jesus mean when He said you will not have gone through all the towns of Israel before the Son of Man comes?

Didn't the disciples go through Israel and evangelize? Jesus hasn't returned...

How do we know if our patience, kindness etc. are truly fruits of the Spirit or just our own maturity through experience?
