The original Hebrew text states that God created Eve "from the curve of Adam". This was later translated to Greek as "Rib".

Considering what we know today about genetics and DNA, curve (as in Helix Curve or Double Helix) is scientifically correct.

Also interesting, male's have both X & Y chromosomes, females X only, proof that the order in the Bible is correct.

God made Adam first and Eve later. 
What was God's purpose for this time difference?
the following is my limited opinions about God's purpose for Adam 

a) Adam was to teach God's words to his wife Eve
God gave His command only to Adam, not Eve. [Gen 2:16,17] 
God wanted Adam to have a responsibility to teach God's word to his wife Eve. [Gen 3:2,3] God wanted Adam to have a responsibility to lead her to obedience to God so that both of them can live a life of obedience to God. Eve was made to help Adam to fulfill God's command [Gen 1:28, 2:15] This creation time difference implies male leadership at home and in the church [Eph 5:23, 1Cor 14:33-35,1Tim 2:13]

b) Adam was a pattern of Jesus. [Rom 5:14, 1Cor 15:47] 
Adam was created to be a king, a priest and a prophet
	A ruler like a king under God [Gen 1:28]
	A worshiper like a priest [Gen 2:15]
	A teacher/keeper of His command like a prophet [Gen 2:15] 
This original purpose was restored by Jesus. Second Adam, Jesus is a king, a priest and a prophet. In some sense, we also become kings, priests, and prophets in Christ. (1 Peter 2:9) We worship God, teach His words and rule the universe For His Glory.

c) Adam/Eve is a shadow of the relationship Jesus and the Church
	Just like Eve was made and given to Adam, 
	the Church was made in Christ and be given to Him.
We can see the relationship between Jesus and the church through marriage. [Eph 5]

Why weren't Adam and Eve created at the same time? 

To answer your question, they were! In fact He created all souls at the same time. The male body was later formed on the 6th day and the female’s body was much later made or manufactured. 

God explains his work through Isaiah in 43:7 where he uses three verbs. The first is Hebrew (Bara). A verb which means He creates something out of nothing. Something that was not necessarily visible or observed. To understand man’s creation you must understand Gen. 2:5 where it says, “And every plant of the field before it was in the earth, and every herb on the field before it grew. 

When he created the heavens and the earth everything was complete including all the billions of galaxaries; including every star and planet, but nothing was visible. Then He created mankind. Gen. 1:27 

In the day that God created man, in the likeness of God made he him; male and female created he them; and blessed them, and called their name Adam (mankind), in the day when they were created. It was the soul of all humans that were created at the same time for His glory Gen 5:1-2

The noun tselem describes the SOUL of man as a “shadow image” of divine essence. Man has essence of soul, just as God has essence; both are real but invisible: 

This is the book of the generation of Adam (mankind) in the day that God created them. Gen 5:1 

The soul was created in the image of The God. Which includes five areas of activity. 
1. Consciousness= Intellectual faculty (Acts 2:4). Your Norms and standards. The conscience is 	simply what you think- For as he thinketh in his heart, so is he: 	Prov.23:7, 
2. Self-consciousness- is the awareness of your own existence. (Isa. 63:10; Eph. 4:30; 1 Thes.5:19; Heb.10:29. 
3. Mentality- Self-will (ed) - Exercise of will (Acts 7:51). Our Ability to Think (1 Cor. 12:11). 
4. Volition or Moral nature - Your decider-The appreciator (John 16:7, 8; Rom. 8:26). Able to distinguish between rights and wrong (Acts 5:1-9). 
5. Emotion Your Appreciator (Rom. 15:30).

Then, Jehovah EloHim (Jesus Christ the Lord God formed (the second verb) Jatsar=Sculpt- like a potter, man (not mankind-just one male) of the dust of the ground. Gen. 2:7, and breathed into his nostrils the soul-life of lives (male and female souls), and the Adam (mankind) became a soul having life. SOUL LIFE, ne’shamah, or the life of God, is the spark that actually gives life. Adam did not become a living being until God breathed into his soul the breath of life.

After the male named all the animals the Trinity took a rib from him and made (the 3rd verb), or manufactured a perfect female body for the man and breathed into her the breath of life and gave her to the man.

In my opinion, this is a "trick" question. I say that because, I believe Scripture tells us (in one place) that "Adam and Eve" (i.e. male and female) WERE "created "at the same time.

Gen 1:26 - ELOHIM said, "let's MAKE (Hebrew asah) MAN / MANKIND) in our image".

Gen 1:27 - ELOHIM "CREATED" (bara) mankind (asah) "MALE and FEMALE" (continues - "created he HIM").

Gen 2:7 - YAHWAH "FORMED THE man (et ha adam"). 

Gen 2.22 - YAHWAH / GOD "took a rib (has se la) from THE man and MADE a "woman" (doesn NOT say "EVE", but ET HA ADAM names her later).

There seems to be quite a bit of "reconciling" needed to make all of these passages agree. One BIG problem is the "time line". The Scripture (as we have it) does NOT seem to follow a chronological order.

Part of the "problem" is the various (Hebrew) words used for; God, make, create, formed, man, mankind etc. 
If someone "out there" can make it ALL align Scripturally, I would like to see it in print.
