Why weren't Adam and Eve created at the same time?

Genesis 2:1 - 25

ESV - 1 Thus the heavens and the earth were finished, and all the host of them. 2 And on the seventh day God finished his work that he had done, and he rested on the seventh day from all his work that he had done.

I personally believe that God created Adam and then Eve sometimes later because, he wanted to ESTABLISH a personal relationship with the creation that would be most like him.

There is no other thing that God breathe life into but Adam. He wanted to ensure that Adam walked like a mini god and that he talked like a mini god. And that Adam could handle being alone to figure some things out before he included someone else into it.

I can compare it to a mother giving birth afterwards they bring the baby to the mother to give them time to be together before they let the other family members in.
