What is pictured in the Bible by the many varied usages of the term “Eye” or “Eyes”? For instance, “eyes” in Genesis 6:8 appears to mean “acceptance.”

I would say that it is the expression "found grace" in the verse cited question that indicates "acceptance", rather than anything to do with "in the eyes of the Lord".

"In the eyes of the Lord" (as used in the verse cited in the question) indicates God's judgment or consideration, similar to references today to "in the eyes of the law" (for example), meaning how a matter is judged or considered from a legal standpoint.
