Leviticus 3:1 - 17
ESV - 1 If his offering is a sacrifice of peace offering, if he offers an animal from the herd, male or female, he shall offer it without blemish before the Lord. 2 And he shall lay his hand on the head of his offering and kill it at the entrance of the tent of meeting, and Aaron's sons the priests shall throw the blood against the sides of the altar.

In the communion sacrifice, all the fat—around the intestines, the kidneys, the appendage upon the liver, and the loins, as well as the fatty tail of the sheep—was offered to Jehovah by being burned, made to smoke on the altar. (Leviticus 3:3-16) The fat was considered the richest and best part of an animal. Offering it on the altar symbolized giving the best to Jehovah.
