In my opinion, the references to water and blood in relation to Christ are allusions to both His human birth as well as to His baptism in water (which bonded Him with humanity, while at the same time having His divinity affirmed by God the Father and God the Holy Spirit) (Matthew 3:13-17), and the shedding of His blood (for the salvation of humanity), both in a physical (through His suffering and death) and in a spiritual (through His institution of the Eucharist) sense.
