By my understanding, when Jesus used the word "you", it was plural. That is, He was referring not just to Simon Peter, but to each of the apostles, as the ones whom Satan wanted to sift (as I would say would still be Satan's desire with respect to all believers -- to test their faith and seek to draw them away from Christ by subjecting them to temptation or adversity). But He then addressed Peter specifically with His knowledge that Peter's "sifting" would come very soon, in the form of Peter's repeated denial of Jesus at the time of Jesus' arrest and trial.

First, I see that Satan asked. He needed permission to "sift" Peter. Jesus addressed Simon Peter… why? I think because Peter was the leader, (spokesman) for the twelve. If Peter failed, then it could lead to the dispersion of the group. Jesus had plans for Peter. Satan only has the power that Got grants over any child of God. The devil is powerful, but not more powerful than God. God uses Satan's activities for His Holy purposes. Sometimes it is to reveal our own sinful purposes. Notice that Jesus did not tell Peter "if" you turn back. He said "when" you turn back. Why? See Matthew 26:31,56. Jesus exhorted Peter to encourage and and help the disciples later. This gives hope to all believers. John 21:15-17.
