In my opinion, Paul (who had been speaking favorably of the generosity in giving of the Corinthian church) was at the same time spontaneously moved to make an exclamation of praise to God for the one gift that outweighs any thankful act of human giving to the point of being beyond words to adequately express or extol -- the gift of Christ's incarnation, sinless life, atoning death, and resurrection.

I think it is the gift of God's Son--"For God so loved the world that He GAVE His ONLY BEGOTTEN SON, that whoever believes in Him, should not perish but have everlasting life." John Wesley, who wrote this hymn, "Father, Our Hearts We Lift," agrees with me: Father, our hearts we lift Up to Thy gracious throne, And bless Thee for the precious gift Of Thine incarnate Son; The Gift unspeakable We thankfully receive, And to the world Thy goodness tell, And to Thy glory live. He based that strophe (stanza) on 2 Corinthians 9:15 KJV: "Thanks be unto God for his unspeakable gift."
