What does Paul mean by “casting down arguments and every high thing that exalts itself against the knowledge of God”
2 Corinthians 5:10
NKJV - 10 For we must all appear before the judgment seat of Christ, that each one may receive the things done in the body, according to what he has done, whether good or bad.

The wording cited in the question is from 2 Corinthians 10:5 (rather than 2 Corinthians 5:10). To me, Paul in this verse is using a military analogy to liken the objections and arguments (even if they might sound very strong or persuasive) that people (under the influence of the spiritual forces that oppose Christ) employ in resisting God (and that are ultimately based on sinful human pride), to the fortifications and physical barriers that are used to repel opposing armies. As strong or persuasive as any arguments and objections that set themselves up in opposition to God may be, the power of the gospel message, and the authority of those who obey Christ's command to preach it to all nations, are capable of refuting them, and of bringing the thoughts of those who hear the gospel "into captivity" -- that is, a changed mindset that now has correct spiritual knowledge; that places faith in Christ for salvation; and that seeks to conform to His will.

Our minds "play tricks" on us. Prior to that verse, it says "the weapons we fight with are not carnal (relating to physical or sexual needs and desires), but mighty through GOD for pulling down strongholds (a place or belief strongly upheld - not in line with God's Word). In Colossians 2, Paul's explains the mystery of God (Christ) and says his goal is that we may be encouraged in heart and united in love, so that we may have the full riches of complete understanding, in whom are hidden all the treasures of wisdom and knowledge. He tells us this so that no one may deceive us by fine-sounding arguments. We can cast them down. I practice these scriptures all the time and for me, it works! When I'm thinking negatively about something hanging out in my thoughts that I just can't seem to put away, I say it out loud; "I'm casting down these arguments because they are not in line with your Word; Lord, I'm bringing this or these thoughts captive under Your obedience". This helps me tremendously to move on and help others also. With Philippians 4:13 in mind also: I can do ALL things through Christ that strengthens me." - Lastly, 1Peter 5:7 says "Cast ALL your anxiety on Him (Christ) because He cares for you!" I truly believe with all my heart that the Word of God helps me through everything that may come my way - good or bad.
