Leviticus 1:17
NKJV - 17 Then he shall split it at its wings, but shall not divide it completely; and the priest shall burn it on the altar, on the wood that is on the fire. It is a burnt sacrifice, an offering made by fire, a sweet aroma to the LORD.

Humans have not only mental memories, but also sensual memories. We recall not only facts, but also sights, sounds, tastes, touches, and smells. And along with each of those types of memories, we have a host of thoughts or reactions that they evoke in us, based on experiences that we have had with which we associate them. We may not even realize that such memories are present until being exposed to a specific stimulus brings those events back to us with full clarity, even though they might have occurred in the distant past. Since humans were created in God's image, this same characteristic is also apparently true of God, as well. The offering of burnt sacrifices that God commanded in the Old Testament produced an aroma that evoked in God a recollection of a prior occasion -- specifically (I would say) of the sacrifices that Noah had made after leaving the ark following the flood (Genesis 8:20-22), when God in mercy promised that He would never again send such destruction on the earth.
