"And the LORD God commanded the man, saying, Of every tree of the garden thou mayest freely eat: But of the tree of the knowledge of good and evil, thou shalt not eat of it: for in the day that thou eatest thereof thou shalt surely die." (Genesis 2:16-17)

Short answer: "God commanded". Eve was not given the responsibility of discernment only that of simple obedience to God and His Word.

There is a difference between not knowing something and being equipped to gain a knowledge of something previously unknown.

The fundamental question is, what scripture give insight into what Eve did or did not know?

Genesis 1:28
Then God blessed them, and God said to them, “Be fruitful and multiply; fill the earth and subdue it; have dominion over the fish of the sea, over the birds of the air, and over every living thing that moves on the earth.”

As persons created in the image of God man was granted a capacity to engage all of his godlike qualities in a world designed to reflect the glorious qualities of his Creator so that man under Gods rule and government could grow and develop as a creature who was designed to be a relational reciprocator of the wisdom, goodness, power, knowledge, and love of God not only as an observer worshiper but a participant with God in his glory.

This glorious role that man is designed to play involved from the very beginning ruling over the rest of creation bringing it under his rule in obedience to God.

" fill the earth and subdue it; have dominion" 

Implicit in the command to subdue the earth is the idea of conquering in order to gain dominion. This as we would discover involved not only the physical realm but also the spiritual.

What we can be confident of is, that while maybe Eve did not know explicitly that it was not possible for someone to lie, she did know that she would meet with resistance to mans rule and therefore Gods rule.

Jesus who is the seed of the woman Gen.3:15 did what the first Adam failed to do by subduing the serpent and regaining the dominion for the sake of His Body the Church. 

Hebrews 2:8-9
You have put all things in subjection under his feet.” For in that He put all in subjection under him, He left nothing that is not put under him. But now we do not yet see all things put under him.
But we see Jesus, who was made a little lower than the angels, for the suffering of death crowned with glory and honor, that He, by the grace of God, might taste death for everyone.

Hebrews 2:14-16
Inasmuch then as the children have partaken of flesh and blood, He Himself likewise shared in the same, that through death He might destroy him who had the power of death, that is, the devil,
and release those who through fear of death were all their lifetime subject to bondage.
For indeed He does not give aid to angels, but He does give aid to the seed of Abraham.

This work began during the earthly ministry of King Jesus. 

Matthew 12:28-30

But if I cast out demons by the Spirit of God, surely the kingdom of God has come upon you.
Or how can one enter a strong man's house and plunder his goods, unless he first binds the strong man? And then he will plunder his house.
He who is not with Me is against Me, and he who does not gather with Me scatters abroad.

And is now carried on by the people of God now under the Reign of King Jesus.

Matthew 28:18-20
And Jesus came and spoke to them, saying, “All authority has been given to Me in heaven and on earth.
Go therefore and make disciples of all the nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit,
teaching them to observe all things that I have commanded you; and lo, I am with you always, even to the end of the age.” Amen.

Where Eve and Adam failed we as His people are left in enemy territory to face the same kind battle armed with the sword of the Spirit the Word of God.

The strong man has been bound so that as we proclaim the Gospel in the name of Jesus Satans captives are set free.

Colossians 1:13
He has delivered us from the power of darkness and conveyed us into the kingdom of the Son of His love,

The nature of His kingdom is not carnal but spiritual and therefore our weapons must be marshaled against the lies that would attempt to oppose Christ His word and accomplishments.

2 Corinthians 10:4-5
For the weapons of our warfare are not carnal but mighty in God for pulling down strongholds,
casting down arguments and every high thing that exalts itself against the knowledge of God, bringing every thought into captivity to the obedience of Christ,

This battle will not be without meeting formidable opposition.

Rev.12:1-17, Rev.20,21

But we are GUARENTEED victory.

Romans 8:37
Yet in all these things we are more than conquerors through Him who loved us.

It is a simple answer. 1) The fact that God told them eat from all produce in the garden of Eden except from the tree which God said 'You must not eat, lest you will die'. 2) Therefore, here lies a fact. God told them, "Do not eat the fruit from a particular tree...and this means that Eve, when tempted, should have realized that here was a diametrically opposed suggestion against God's word. She was PERFECT and had the 'power of reasoning. 3) She ate and gave Adam to eat. She was never ever ignorant of God's commands.
