Because God loved and blessed man, who was created as an image of God, (Genesis 1: 27-28), the fruits of violating/betraying God's love is a sin. This has separated God and man, and the wages of a sin is death, but the love of God is eternal life in Christ Jesus our Lord (Romans 6: 23).

Hate is just another side of love of the same coin; if our love one is betraying us, we hate him/her although we still love him/her and look forward for reconcilliation as God has done to us (John 3: 16-21).

To me, why God hates sin has to do with why He created mankind. 

Why did God create us and why did He create us as we are? If he hates sin and He could create us any way He wanted to, why didn't He create us all as a bunch of robots that only do what they are programmed to do and so never sin. Just praised God all day everyday. But He didn't. Why?

I think God created us to choose Him. To voluntarily love Him. That is why He gave us a free will. Without a free will, what would God get from us choosing Him? Not pride in building a robot, He can speak anything into existence so how would that please Him? It kinda is like "what do you give someone who has everything?" God has everything. What can we give Him that pleases Him? The answer is we can choose Him and love Him!

So what does that have to do with this question? Before we can choose God, there has to be a choice! We can either choose God or we can choose sin. God hates sin because when we sin we are rejecting His will for us. Rejecting Him. Rejecting our reason for being created. Our purpose. 

God gave mankind the law to enable us to recognize sin. He also, being outside of time, also knew all would sin at times and since the law "the wages of sin is death" sentenced all to die He had to give us not just a Way but a reason to choose Him. He therefore chose to die on the cross to prove His Love for us by paying the price for our sins if we choose Him! Defeating sin for those who love him in return.
