I would say that a winepress was a device that was used to extract the juice from grapes by pressing (crushing) them, for purposes of then fermenting that juice and turning it into wine. In the passage cited in the question, it is being used as a metaphor for God judging and punishing human sin (with the juice from the grapes representing blood), from which the reference to God "trampling out the vintage where the grapes of wrath are stored" in the Battle Hymn of the Republic is derived.
